A new whisky/espresso bar in Waterloo is opening up, just at King and Bridgeport. Sounds like a refreshing new idea in K-W. Also, they have a jackalope as a mascot.

However, they're a little coy about their hours of operation:

We're open most days about 8 or 9, occasionally as early as 7, but some days as late as 12 or 1.

We're closed about 7 or 8, and occasionally on weekends at 11.

Some days or afternoons we aren't here at all, and lately we're here
all the time except when we're someplace else ;)

  My Mai Tai

A Trader Vic mai tai, straight from the book. Remember, the only fruit juice in a mai tai should be lime. Yes, well, there should be a pineapple spear, a maraschino cherry and a sprig of mint, but I didn't have time or inclination to garnish.




  New Bitters

Well, now no one can say I don't have black walnut and celery bitters.



  Homemade Lemonade

Nothing like this on a hot Sunday afternoon. Just add Pimm's.



  Thursday Night Drinks

A Black Velvet, or Black Velveteen if you want to get technical. Half Guinness, half Strongbow. I love that the Guinness floats on top.

- 1/4 Cointreau
- 1/2 Bacardi rum

Shake and strain into a cocktail glass.

BTW, a nice variation is as follows:

Ex-Why-Zed

- 1/4 lime juice
- 1/4 Creole Shrub
- 1/2 Havana Club 7 year rum
- 1 dash Fee Bros. lemon bitters

- 1/6 Lemon Juice
- 1/6 Grenadine
- 1/3 Dry Gin
- 1/3 Kirsch

Shake well and strain into a cocktail glass.

For an interesting twist (a Vie Rosé Cocktail), add a few drops of rose water to the mix.

- 1/3 Green Chartreuse

Use a liqueur glass and pour ingredients carefully so that they do not mix.

- 2 dashes Orange Bitters
- 1/3 Parfait Amour
- 1/3 Scotch Whisky
- 1/3 Italian Vermouth

Shake and strain into a cocktail glass.

- 1/3 Crème de Cacao
- 1/3 Bénédictine
- 1/3 Brandy

Use liqueur glass and pour ingredients carefully, so that they do not mix.

Saw this on Imbibe's page. It's a really cool-sounding drink on the menu at Bar Veloso in São Paulo, Brazil.


Sake and Starfruit "Caipirinha"

- 1 3/4 oz. sake
- 1 starfruit, cut into cubes except for one star-shaped "round" reserved for garnish
- 1 tsp. sugar
- 5 fresh basil leaves
- Cracked or cubed ice
Tools: muddler, barspoon
Glass: Old Fashioned
Garnish: remaining "round" of starfruit

Muddle starfruit and sugar in glass. Add ice, sake and basil. Stir well and garnish.

Use liqueur glass and pour ingredients carefully so that they do not mix.
